Low Carb Bread Pudding Recipe with Smart Carb # 2 Cinnamon Raisin

Miss Erica’s JB Bread Pudding
Yield 1 – 8 inch square pan**
6 slices Julian Bakery’s Smart Carb #2, Cinnamon Raisin
4 Tablespoons of Canola Oil
1 cup applesauce
1/2 cup slivered Almonds
4 eggs, beaten
2 cups skim milk ( Or Almond Milk)
3/4 cup (generous) organic brown sugar
1 tablespoon ground cinnamon*
3 tablespoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C).
Break bread into small pieces into an 8 inch square baking pan. Drizzle applesauce and canola oil (mixed together) over bread. If desired, sprinkle with almonds.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
Bake in preheated oven for about 45 minutes, or until the top springs back when lightly tapped. It should be goldened.
**You can also half the recipe and use a small loaf pan which works well too
*If you are a cinnamon lover like I am, you can load up almost 3 tablespoons and it taste delicious!
