I have been eating a low carb diet for year and was so glad when I found the Julian Bakery Smart Carb bread # 1. It seems in August they launched a new and improved version of the bread that does not have soy and includes whey protein and chicory root which I guess is inulin. I did a little research on inulin and it is truly amazing. From what I gather it allows for carbohydrates to pass through your system without being digested or spiking blood sugar. All I can say is that I have been eating 2-3 slices a day for the 6 Months and during that time I went from 156lbs down to 128lbs.
