Paleo Wraps – Avocado Bacon “Egg” Roll Recipe
One of my favorite pre-Paleo guilty pleasure snacks were the Avocado Club Egg Rolls at California Pizza Kitchens and I’ve missed them since I’ve gone Paleo. But, using Paleo Wraps, and baking with an egg wash results in a great little appetizer or snack that feels indulgent, but has a ton of fiber, healthy fats and protein!
Makes 10 pieces
5 Paleo Wraps
4 Tablespoons of Paleo mayonnaise
10 oz boneless skinless chicken breast or thigh
5 strips of uncured bacon
¼ cup tomatoes, diced
½ avocado, diced
1 egg, to use as a wash
Sea salt and pepper to taste
Preheat oven to 320 degrees (we’re cooking on low because Paleo Wraps brown quickly and I don’t want you to burn them!)
Cooking the Meat
Dice the chicken and bacon into small chunks (about 3/8 inch thick) – kitchen shears makes this quick
Add the bacon to a skillet to cook
Add chicken once bacon begins to let out some of its fat, season to taste
Cook until chicken done and bacon is at desired crispness. Drain fat and set aside in a bowl.
Assembling the Rolls
Use the egg and 1 Tablespoon of water to make an egg wash by whisking together in a small bowl and setting aside. Place Paleo Wrap on a flat surface with one corner pointing toward you creating a diamond shape Use a spatula or spoon to distribute a thin layer of Paleo mayonnaise over the top of the Paleo Wrap Distribute chicken, tomatoes, bacon and avocado on the Paleo Wrap in a row along the bottom edge of the wrap. Make sure you have a 1 inch border from the corner of the Paleo Wrap. Use a brush to apply a thin layer of egg wash along the border of the Paleo Wrap.
Roll from the bottom corner up, and over the filling, fold in each side, and continue rolling into a compact roll, pressing the corners to ensure a sealed seam.
Cooking The Rolls
Brush a light egg wash coating on the outside of the rolls and ensure that all seems are sealed
Place the rolls without touching on a nonstick baking sheet, or a baking sheet lined with wax paper
Bake at 320 for approximately 10 to 15 minutes, turning once, until golden brown
Recommended Additions / Modifications
Wasabi or Dijon mustard can be added to the Paleo mayonnaise to give the rolls more of a kick
Paprika, chili powder, chipotle can all be added for seasoning variations
Shown with hot sauce for dipping, but chipotle sauce or honey Dijon would can be used instead.
