For a lycopene stacked, easy to make meal try this Indonesian raw
tomato-salad with (basmati or brown) rice, fish or chicken. It contains no fat and lots of lycopene!
In Holland, the Dutch-Indonesians call it Sambal-Tomaat:
salt & pepper
1 Teaspoon sugar or sweetener
1 Tablespoon lemon juice OR lime juice (about 1/4 of a lemon and 1/3 of a lime)
1 Teaspoon of your favorite sambal (Chinese/Indonesian spice sauce)
Directions: Chop the tomatoes and the onion as small as possible. Add the sambal, sweetener/sugar, the lime/lemonjuice and a pinch of salt and pepper. Serve cold with hot rice and combine with grilled chicken, fish or shrimp.
