The next super food I want to discuss is also another favorite of mine that I try to include in everything I eat. They’re round and red, soft and juicy. They are consumed in diverse ways including raw, as an ingredient in many dishes and sauces, and even in drinks. Botanically it’s considered a fruit, but is refered to as a vegetable by most people. If you haven’t figured it out yet, this post is about tomatoes! Although I love the taste of tomato, the real reason this fruit has caught my attention is because it is so rich in lycopene and carries a laundry list of health benefits.
Tomatoes are eaten throughout the world, and their consumption is believed to benefit the heart, pancreas, and prostate, among other organs. They are very rich in Vitamin C, A, and K. Tomato and tomato derived products are the richest source of the carotene lycopene, one of natures most powerful antioxidants. In recent years, lycopene in tomatos has been given the spotlight by the food science and phytonutrient research community. This exciting phytonutrient has been repeatedly studied in humans and has proven to be protective against a growing list of cancers including:

While lycopene plays an important role in tomatoes’ health benefits, it is not the only nutrient that makes tomatos so healthy to eat. Serves 2:
4 Tomatoes
1 Onion
salt & pepper
1 Teaspoon sugar or sweetener
1 Tablespoon lemon juice OR lime juice (about 1/4 of a lemon and 1/3 of a lime)
1 Teaspoon of your favorite sambal (Chinese/Indonesian spice sauce)
Directions: Chop the tomatoes and the onion as small as possible. Add the sambal, sweetener/sugar, the lime/lemonjuice and a pinch of salt and pepper. Serve cold with hot rice and combine with grilled chicken, fish or shrimp.
