Paleo Protein Bar Recipe

Paleo Princess here with Julian Bakery!  I just made some delicious protein packed paleo coconut bars and I’m hooked!  I was pretty leery to make a bar without any type of flour but I’ll say that you really don’t need it in this recipe because the coconut makes it fluffy on its own.  I have such a huge sweet tooth and admittedly it’s been very hard for me to give up all those wheat filled cookies and licorice so this bar not only satisfies my sweet tooth but it gives me a bit of protein too and I could always use more of that.  The protein powder, that is a Julian Bakery best seller, is as close to paleo as it gets; deriving from grass fed cows.  I am breastfeeding so the flax seed meal makes it a great lactation food!  I do not use raw honey as it’s not suggested to eat raw honey while breastfeeding but if you’re not, use raw. Often times I keep nuts and dried fruit next to my rocking chair so now I can add this to my goodies to grab a bite while I’m feeding my little one and my husband loves to eat these bars before he works out for a shot of energy.

 Makes about 12 bars

Ingredients:

2 Tbs. flax seed meal

4 Tbs. water

1 Tbs. pure vanilla extract

1 egg

1/3 c. coconut oil

¼ c unsweetened almond butter

¼ c honey

1 ¾ c blanched slivered almonds

¼ c. sunflower seeds

1/3 c. pumpkin seeds

2 tsp. cinnamon

½ tsp. baking soda

2 Cups Shredded Organic Coconut

¾ cups grass-fed organic whey protein powder (Primal Option) / Paleo Protein Powder (Chocolate Or Vanilla)

Directions:

  1. Mix the flax seed meal and water together in a small bowl and set aside
  2. In a medium bowl combine vanilla, egg, coconut oil, almond butter and honey
  3. In a large bowl  combine almonds, sunflower seeds, pumpkin seeds, cinnamon, baking soda and protein powder
  4. Add the medium bowl of wet ingredients to the large bowl and mix well to combine
  5. Spread mixture into a pan (9×13 suggested) smooth and push down
  6. Bake at 325 degrees for 20 minutes or until golden brown
  7. Let cool on counter then transfer to refrigerator to cool for at least an hour then cut and enjoy the perfect Paleo Protein Bar

    I just put these in the oven and can’t wait to taste them. You need to edit your recipe though. When I got to the end I thought, “when do I add the coconut and what about the flax seed mixture?” So I just assumed you meant to add the flax mixture to the wet ingredients and the coconut to the dry ingredients. So that’s what I did. Thanks so much for such a healthy and
    delicious treat!!!
